Ultimately you won't be able to prevent vassals from revolting at some point in the game. (I believe it's +25 per revolt and it does indeed stack.) Once you've squashed the revolt you get a + modifier for having put down a revolt which will make future revolts less likely. For example, if you have a larger retinue than the total number of men they can muster or if you have enough cash to hire mercs to put down their revolt it's sometimes worthwhile to get them to revolt so you can put down their revolt. Sometimes, however, it's for the best to let a faction declare war on you. This increases the opinion of the person you transferred vassalage to and removes the problem of the vassal that didn't like you. If you have vassals that have low opinions of you but are low ranked (counts, barons, etc) you can just transfer them to people who don't hate you but don't love you either. (Bonus points for giving a title that another vassal wants control of to the vassal you transferred to the vassal that kind of dislikes you, so now instead of hating you they hate your other vassal instead.) If a vassal really hates you but you can transfer control of that vassal to someone who only kind of dislikes you, you can transfer control of the vassal that hates you to the one that only dislikes you and now they're that vassal's problem. If they have a negative from "Desires control of X" transfer the vassal that controls that to them. Sometimes you'll see something like "Desires county/jarldom of X." If this is the case they will have a relatively large negative modifier for wanting it and if you can spare that title, you can give it to them and remove that negative penalty as well as get the positive effects of giving them a title.
